Keto Sausages with Cauliflower Mash, Asparagus and Gravy

2 Free Range Gluten Free Sausages
5 Asparagus Speer’s
1 cup Beef Stock
1 Tbsp Ghee
1/2 Cup Chopped Cauliflower Florets
1/4 Cup Chopped Onion
2 Cloves garlic crushed
Xanthan Gum if needed
1 cup of Cauliflower florets
2 tbsp butter
Salt and Pepper
Grab a fry pan and saute your cauliflower, onion, garlic and thyme in the ghee until all ingredients have softened. Then add your beef stock and allow to reduce slightly, and season with salt and pepper. Then transfer to a food processor, removing the thyme and blend ingredients to a smooth texture.
Once blended return to the pan and either add more stock or add xanthan gum until you get the right consistency, and that your gravy made.
Now you can either grill or pan fry your sausages, if pan frying them seal them off in a fry pan and then place in an oven for about 10 minutes to cook through.
Next boil your cauliflower florets in water for 5-7 minutes until tender.
Next drain and place into a food processor with the butter and salt and pepper to taste, and blend until you have a mash.
Boil your asparagus for approximately 3 minutes.
Now plate your meal and enjoy. X
