Up until recently I have been the owner of Daisy Dining which was inspired by my stunning mother, she was my best friend, who I lost suddenly however she gave me the strength of love, cooking and freedom. Daisy Dining was my gift to her and is in memory of her. I grew being taught to cook by my mother, even having a miniature kitchen designed to sit beside her kitchen as a child so I could cook alongside her. We did most of our shopping at markets and really only went to a supermarket for the basics.
My beautiful mother who did many cooking courses including Cordon Bleu and Di Holuigue. Mum was very traditional in her cooking. I was very lucky to experience evening meals that were more of a dining experience that your ordinary dinner. There was always a lot of thought and love put into every meal. I think I spent most of my life asking for Beef Bourguignon and Soufflés. Which has resulted in me having a strong background in French and traditional cooking.
I grew up enjoying fresh produce and shopping at markets, and spending hours in the kitchen with my mother so this passion has lived on. For me there is nothing more beautiful than being inspired by the ingredients and developing a recipe from the heart
I take food ethics very seriously. I have a huge focus on local produce and worked closely with my suppliers ensuring the produced I purchase is truly ethical. I spent the time discussing with them their farming methods and also visiting them on a regular basis.
Now this does not just apply to animal products but also fruits and vegetables, as in this day and age there is so much produce that get sprayed or even sanitized. Miss Daisy has even started growing her own vegetables.
I personally choose to cook from my home kitchen as it allows me to cook with traditional methods. Meaning there are no big batches being made, no bain maries or pre-peeled vegetables. Everything was made from scratch and fresh. Braises have the meat sealed off and then the braising dish is deglazed and then cooked in a traditional way.
So when I closed Daisy Dining, I decided to start a food blog, based on cooking, food, lifestyle and mental health something I am very passionate about. Miniature Schnauzers Baci and puppy Beso plus my love of Gin and Champagne.
