So what is it about chocolate mousse, I remember as a child my parents ordering Maxims takeaway and the black box would arrive with the Red Rose. Tucked along the side including the silver cups of thick dark mousse.
I was recently asked by a very loyal customer to make chocolate mousse for her father, this was a custom order. Did I scroll through recipes on line, or in books no. I went to my mothers handwritten recipes and found it.
Now for to share this recipe that has become so popular on the Daisy Menu. And sorry Mum I have made some changes.
Makes approx. 500ml
125 grams 90% Dark Chocolate
1 tbs grated orange
1 tbs Cointreau
5 eggs separated
Firstly whipped egg whites until stiff and airy
Heat a pan of simmering water and place in heat proof bowl and melt chocolate. Once melted add butter until melted.
At this point in the recipe my mother uses beaters however I use a whisk to keep the mix light.
While warm whisk in a yolk at a time, then whisk in orange zest and Cointreau.
Now in three stages whip the egg white through, you will see air bubbles.
Pour into serving ware and allow to set four hours or overnight covered.
