Instructions
  1. Let’s cook
  2. Get a Dutch oven and add the olive oil and mince then cooked until brown. Then add onion, garlic and Italian seasoning and mix through. Next add the grated zucchini and carrot, celery and mix well. Then add the tomato purée. And let cook for 20 minutes with the lid on.
  3. Then remove the lid and mix it and cook for 10 minutes without a lid, after this add the mushrooms and cook for a further 10-15 minutes. Then it’s ready to serve with either zucchini noodles or konjac noodles. I freeze 3 serves and have the first with konjac noodles as I can store the other half packet in the water they came in for up too three days. To use konjac noodles open packet and pour liquid into a container and then split the noodles into 2. Put 1 serve back into the container and the other rinse and dry, then place them in the sauce and reheat everything. Top with Parmesan to finish. Enjoy. X
