Keto Cauliflower and Broccoli bake

Keto cauliflower and broccoli bake
Ingredients
1/2 head of small cauliflower
1 cup broccoli florets
250ml Greek yogurt
100ml thickened cream
1 free range egg
2 slices of nitrate free bacon
1 cup of grated cheddar
Salt and pepper
Good grating of nutmeg
Coconut oil

Time to cook
Firstly trim any rid from bacon. Heat a teaspoon of coconut oil in fry pan and cook bacon until crispy. Don’t discard the fat. While cooking heat oven to 180 degrees and break cauliflower into florets.

Place cauliflower and broccoli in a bowl and season with salt and pepper. Remove bacon from the pan once cooked and pour the oil from bacon over the cauliflower and broccoli. Then place on a lined pan in oven for 10-15 minutes until the moisture starts to come out of the broccoli.
In the meantime time in a bowl mix the yogurt, cream and egg. Season with salt and pepper plus the nutmeg and add 3/4 of the cheese. Then dice the bacon up and add approximately one slice to the mix.

Remove the cauliflower and broccoli from the oven and remove excess liquid with paper towel. Now grab a baking dish and layer the cauliflower and broccoli, spread the cream sauce over.

Then sprinkle with remaining cheese and bacon. Place back into the over for 20 -30 minutes until golden depending on your oven. Then enjoy as a side dish.X
