Instructions
  1. Time to cook
  2. First clarify the butter. Melt the butter. Once melted you will notice a foam on the top. Scrap of the foam. These are the fat solids in the butter you should be left with a clear butter.
  3. Get out your food processor with your normal blade and add the egg yolks, pinch of salt, white wine vinegar. Then turn the food processor on and through the feeding tube slowly add the butter. This should come together like a thick sauce. Then add the lemon to taste.
  4. Serve over the asparagus. X
