  2. Turn your oven on to 180 degrees and allow to heat up. Now mix your herbs and lemon zest with your keto breadcrumbs. Next paint your rack of lamb with the dijon mustard, and now paste your breadcrumbs over the meat section of the rack. Then place in oven and bake for 20 mins for med-rare. Take your rack out and allow to rest for 10 minutes.
  3. Now boil your cauliflower florets for 5 minutes, then add the broccoli for another 3 minutes. Saute your spinach in a fry pan with the liquid coconut oil. Drain the cauliflower and broccoli, and add all three to a food processor, add the butter and salt and pepper to taste and mash.
  4. Next slice your zucchini thinly, and saute in a fry pan for about 5 minutes and then add tomatoes and allow for the butter to go nut brown. You will get juice from the tomatoes.
  5. Now plate your dinner and enjoy. X
